Cowboy Candy with Red Ale – Jalapenos and Hungarian hot peppers


Cowboy Candy with Red Ale – Jalapenos and Hungarian hot peppers

Recipe which will make two quart Mason Jars worth:
2 lbs sliced peppers
12 ounces Red Ale (any sweet ale or Heff)
1 cup Apple Cider Vinegar
4 cup of Sugar
2 tbsp of pickling spice
1 tbsp peppercorns
1/2 tsp turmeric
1/4 tsp of ginger powder
2 tsp crushed garlic
2 mason jars with lids

Add the 12 oz beer to a nice simmer for a few minutes to help get rid of the carbonation and then add the 1 cup Apple Cider Vinegar.
Once things are starting to bubble a little turn down the heat to a simmer and add the sugar and all other ingredients.

As for the jars they should be as sterile as possible like I added them to the boiling water for a few minutes each. Wash your peppers as much as possible and make sure your hands are clean. Trim the tops off and slice to the size desired although using a mandoline slicer is recommended for ease. Add the peppers to the simmering liquid and simmer for 10 to 15 minutes making sure everything has been cooked just enough to ensure it is sterile. Begin scopping out the peppers and add them to the jars and once all peppers have been added you can begin adding the left over liquid. Once the liquid is still very warm but not to the point it will burn you add it to both jars until filled to the top. Close and shake to get any trapped air to the top and top off both jars with the remaining liquid or apple cider vinegar and put in fridge for 2 weeks and shake periodically to move things around a bit. After two weeks…enjoy!

Sweet and Spicy IPA Pickles


Sweet and Spicy IPA Pickles by Bitter Reality Brewing.

Recipe which will make two quart Mason Jars worth:
2 lbs pickling cucumbers
1 cup Apple Cider Vinegar
1/3 cup of Sugar (recommend 1/2 cup)
1.5 tbsp pickling salt
1 tsp celery seeds
2.25 tsp black peppercorns
2.25 tsp mustard seeds
12 ounces IPA or Pale Ale (Should be really hoppy!)
1/2 cup crushed ice
4 spring of fresh dill per Mason Jar
3 cloves of garlic diced and added to the Jars
1 sliced Jalepeno per jar (I used to Thai hot peppers but the Jalepenos are better in my opinion)
I also added .15 ounces of dry Citra hops for about 15 minutes but next time I would do .30 to.50 ounces of Citra dry hops for 30 minutes before adding the other ingredients.

Add the 12 oz hoppy beer to a nice simmer for a few minutes to help get rid of the carbonation and then add the 1 cup Apple Cider Vinegar.
Once things are starting to bubble a little turn down the heat to a simmer and add the sugar, pickling salt, celery seeds, mustard seeds, peppercorns and allow to simmer for 10 more minutes (should be around 15 minutes total).

Remove the hops if you added them like I did and take off the burner. Add the 1/2 cup of ice to chill it down a bit.

Red Velvet Stout – Brewed on Anvil Foundry & Chilled with Jaded Brewing Scylla – Part 1 of 2

Essentially we’re brewing a Milk Stout or Oatmeal Stout based on how your looking at it but the goal is to build an amazingly velvet chocolate stout to help carry the Red Velvet flavoring which will be added as a back sweetening using Amoretti Red Velvet natural flavoring.

Recipe for a 5.25 gallon batch for the Red Velvet Stout:
6 lbs Maris Otter
2 lbs Munich I
1 lb Flaked Oats
1 lb Vienna Malt
12 oz Chocolate Wheat
12 oz Pale Chocolate
4 oz Caramel 80L
1 oz Columbus hops 16.2 A added at 65 minutes before flame out

Last 10 minutes:
1/2 Whirlfloc tablet
12 oz Lactose Sugar (last 10 minutes)
1 heaping tsp of Wyeast Yeast Nutrient

Omega 048 British XI Yeast

10 Home Brewing Tips, Recommendations, and Hacks – Week 3

I was working to share knowledge I’ve learned over the years and to inform on things every home brewer should be aware of from Beginners to Advanced and I quickly went from a top 10 to over 100 tips, recommendations, tricks, hacks, suggestions and realized that many home brewers know some of these but not all of these.

I will work to share 10 different home brewing tips every week for the next 10+ weeks.

1. Size Matters
2. Spare Kettle or Pot

Wicked Weed – Guilty Pleasures Variety Four Pack – Flavored Stouts – Review

I don’t normally do videos to review beer but this was a special case and these were amazing.

This is a special release from Wicked Weed out of Ashville, NC
This included: (All were between 8.5 to 9% abv)
Brownie Stout with Chocolate & hemp-like terpenes.
S’mores Stout with Chocolate, Vanilla, & Cinnamon.
Milk & Cookies Stout with Golden Raisins, Cinnamon, & Vanilla.
German Chocolate Stout with Chocolate & Coconut.

They were a bit on the high side for a 4 pack but I do feel they were worth it as they were big beers and amazing stouts. I liked all of them even the Brownie which was a bit strange but the Milk & Cookies was may favorite without question.
