Cowboy Candy with Red Ale – Jalapenos and Hungarian hot peppers
Recipe which will make two quart Mason Jars worth:
2 lbs sliced peppers
12 ounces Red Ale (any sweet ale or Heff)
1 cup Apple Cider Vinegar
4 cup of Sugar
2 tbsp of pickling spice
1 tbsp peppercorns
1/2 tsp turmeric
1/4 tsp of ginger powder
2 tsp crushed garlic
2 mason jars with lids
Add the 12 oz beer to a nice simmer for a few minutes to help get rid of the carbonation and then add the 1 cup Apple Cider Vinegar.
Once things are starting to bubble a little turn down the heat to a simmer and add the sugar and all other ingredients.
As for the jars they should be as sterile as possible like I added them to the boiling water for a few minutes each. Wash your peppers as much as possible and make sure your hands are clean. Trim the tops off and slice to the size desired although using a mandoline slicer is recommended for ease. Add the peppers to the simmering liquid and simmer for 10 to 15 minutes making sure everything has been cooked just enough to ensure it is sterile. Begin scopping out the peppers and add them to the jars and once all peppers have been added you can begin adding the left over liquid. Once the liquid is still very warm but not to the point it will burn you add it to both jars until filled to the top. Close and shake to get any trapped air to the top and top off both jars with the remaining liquid or apple cider vinegar and put in fridge for 2 weeks and shake periodically to move things around a bit. After two weeks…enjoy!
